Let's start with some Halibut!

OK, my first post as a blogger! Who woulda thought? Anyways tonight I was not totally in the mood to cook however, I already thawed the Halibut steaks. I ended up pan searing the Halibut, made some rigatoni with garlic and butter, along with some long green beans. Hope you enjoy, its just what I had in my cupboards. Cheap and cheerful!



Ingredients:



2 Halibut Steaks about 1/2 inch thick

1/2 lbs. of rigatoni

1 can long green beans salted

4 tbs. of butter

Extra virgin olive oil

Crushed red pepper

Garlic powder

Mediterranean sea salt or any salt

Black pepper

Dry basil

Dry Italian seasoning

Lemon juice



Serves two and takes about 30-45 min from start to eating



In a large pot begin to boil water for the pasta. Make sure to put as hot a water as your sink can produce this will save time in the kitchen! While you wait for your water to boil, take out the two halibut steaks, rinse them under cold water and pat dry with a paper towel. Season with salt, black pepper, dry basil, crushed red pepper, and garlic powder. When applying the seasoning remember that dry seasoning is a lot stronger than fresh seasoning so do not use a lot.

Now, once the water is boiling and the noodles are just about cooked begin cooking the fish. Preheat a medium sauce pan to medium-high heat and add about 2 tablespoons of extra virgin olive oil to the pan. Lightly add the preseasoned side of the fish to the preheated pan (make sure not to splash grease on yourself it hurts!). Now you can season the other side of the fish and cook for 5-6 minutes a side. (look for a nice brown on the bottom of the fish, if it does not brown increase the heat or reduce if it is browning to fast.

While the fish cooks open the can of green beans and place it in a microwave safe bowl that has a good lid. Drain the beans about half way before pouring them in the bowl, add 1 tablespoon of butter, a good amount of lemon pepper (about 4-5 shakes), and a few pinches of salt. Place the bowl with its lid on in the microwave and heat on high for 2 minutes, shake then cook for an additional minute.

Take the cooked pasta and drain, do not rinse the pasta! Take the same pot and add 2 tablespoons of the extra virgin olive oil, 1 tablespoon of butter, Italian seasoning, garlic powder, and crushed red pepper to the melted butter. Once the butter is all melted and the seasoning is in it add the noodles and stir well.



Serve the fish on the noodles for best results! :)
